01 / ABOUT THE PLACE

About this place

When the mood calls for refined Japanese dining and drinks without stiff pretension, Sanbaka in Higashi-Kanda makes a compelling choice. True to the word asobi—playfulness—woven into its identity, the kitchen pairs rigorous preparation with creative twists, offering diners something fresh on every visit.

Seasonal Omakase and Drinks-Friendly Small Plates

For dinner, the flagship draw is an omakase meal of around 10 courses, progressing smoothly from sakizuke starters and sashimi through grilled items, fried dishes, and dessert. Seafood shipped from Nagasaki's Goto Islands and seasonal harvests from across Japan feature generously throughout, leading up to freshly cooked donabe rice whose fragrant scorched crust leaves a lasting impression. Those leaning toward an evening centered on drinking can instead choose the sakana omakase, a tailored spread of around 5 small plates designed to accompany sake, supplemented by à la carte favorites as the night unfolds.

Creative specialties demand attention, such as nimaki, Goto Island white fish and root vegetables wrapped in bamboo sheath and simmered in sansho-scented dashi broth, or the nikujaga bakudan, which encases vegetables inside a generous meat parcel. Distinctive fermented delicacies like nemurase tofu, country-style tofu cured slowly in barley miso, concentrate savory umami and keep sake cups refilling.

Curated Local Sake and Regional Shochu

The drinks list is thoughtfully built to complement the menu, offering sake recommendations matched to the courses alongside authentic regional shochu—including Goto Mugi and Goto Imo from Nagasaki, barrel-aged Iki Super Gold—and wine. At lunch, generous daily sets showcase quality ingredients, making the spot just as welcoming by day as it is after dark. Warm hospitality across the counter and tables sets an easygoing backdrop for the kitchen's craft and wholesome culinary ideas.
